185. Tomato Barbecue Sauce p.479

There’s no recipe for this one on Epicurious.

This barbecue sauce is meant to accompany Lillie’s North Carolina Chopped Barbecue, which we’ll get to next time. It’s apparently the style of barbecue sauce popular in Lillie’s part of North Carolina, and is best served slathered over chopped pork barbecue. It probably works well on most grilled meats though. This sauce is unlike most of the barbecue sauces I’ve known. It’s very vinegary, and fairly sweet, without a whole lot of heat, and not a lot of depth.

The recipe has a fair list of ingredients, but since you just stir them together and simmer for five minutes it’s not too much trouble. You just combine tomato purée, cider vinegar, Worcestershire sauce, apple juice, pineapple juice, brown sugar, dry mustard, salt, chili powder, Tabasco, cayenne, celery seed, and cinnamon in a saucepan, simmer, and apply to the protein of your choice.

The recipe is really heavy on the vinegar, 3/4 of a cup compared to 1 cup of tomato purée. The rest of the ingredients are in tablespoons and teaspoons, so this ratio really sets the tone of the recipe. Cider vinegar is a little sweeter, and less acidic than many other vinegars, but that’s still makes for a very sharply flavoured sauce. The recipe describes this as a particularly sweet sauce, but compared to the BBQ sauces available on grocery store shelves it’s certainly not pushing the boundaries of sugar content. It’s a sauce to be applied near the end of cooking, or over offset heat, it will burn quickly if exposed to direct flame, but it’s by no means a candied glaze.

My main issue with this sauce was a lack of depth. The ingredients mostly contributed to sweetness, acidity, or heat, precious few give the sauce body, richness, or complexity. Specifically many of my favourite BBQ sauces have a slow simmered tomato base, or include smoked peppers, and more spices. The recipe is counting on Worcestershire sauce to cover most of those bases, and while it’s a wonderful product, it just wasnt quite able to do the job on it’s own.

This sauce was by no means bad, the identically named Tomato Barbecue Sauce, and Coffee Bourbon Barbecue Sacues on page 898 seem much more promising. I made a hybrid of those two recipes a couple of weeks ago to great results. If lots of vinegar, moderate sugar, and modest heat is your ideal BBQ sauce, then this is a perfectly decent way to go. It’s just not my personal preference.

180. Seared Salmon with Balsamic Glaze p.290


The recipe

Jacques Pépin said it best, if you’re going to fry fish, try to do it at the neighbours’ house. I was working from home the day I made this dish, and my dining companion wasn’t getting back until 9 pm so I decided to make fish for lunch. As regular readers know she’s not entirely comfortable with things that come from the sea, fish least of all. Salmon is her most hated fish, so I try to be polite about cooking it when she’s not around. The dish is as simple as it gets, requiring just a few pantry staples, and some nice Salmon fillets (I quartered the recipe and just made a fillet for me). All the recipe involves is seasoning the fillets with salt and pepper, pan frying them until they’re just cooked through, and once the salmon is out of the pan deglazing it with a mixture of balsamic vinegar, water, lemon juice, and light brown sugar. Once this sauce is reduced it’s spooned over the salmon and served.

What the book fails to mention is the billowing clouds of fish smoke that will fill your poorly ventilated apartment, and that the first thing your dining companion will say when she gets home is “gah, fish!”, or that your pillows will smell like fried fish, and that a week later the kitchen pantry will still have a faint fishy odor. The fish is seared over highest heat in a non-stick skillet (more cancer, yay!), and it started smoking right away. After the recommended 4 minutes the skin side of the salmon was black and charred, not seared. I reduced the heat a bit to cook the top side of the fillet, and got it out of the pan once it was nicely browned. When I cut into it the fish was still pretty much raw in the thicker part of the fillet. I only served myself the skinnier side which had cooked through. I made the pan sauce, and brushed a bit of it onto my fish, but it picked up a lot of the burned flavour from the pan, and I over reduced it as well (that pan was really hot).

I suspect that my modifications to the recipe got me into trouble. I was supposed to cook 4 fillets in a 12 inch skillet, but I did one fillet in an 8 inch skillet. With less fish per square inch to cool the skillet down the fish may have burned faster. I think my fillet was a more like 8 ounces than the recommended 6, which would explain the under cooking.

Despite the snafus, the fish tasted quite good. I peeled off the blackened skin, and the meat of the thinner half of the fillet was nicely cooked. Even with the slightly burned flavour the pan sauce worked well, it was a touch sweet for my taste, and if I made it again I’d increase the lemon juice, but it did compliment the salmon’s flavour nicely.

I guess this is one of those recipes that you can’t vary from too much. Many Epicurious posters appear to have had success, so I’m going to assume that this is just me. Make sure to cook the right number and size of fillets and you’ll probably be OK. Even done properly your house is going to stink though. I usually try to do this kind of smelly frying on the side burner of the grill, to better let the neighbours enjoy the fishy smell. Alas, I was out of gas the day I decided to make this. I was happy with the flavours of this dish, and it was dead simple, and lightning fast, but I was less happy with the fine film of fish oil that settled onto every horizontal surface in the whole house. I’ll plan on trying this one again and following the instructions more closely next time. For now I’ll give it at

176. Apple Raisin Cake p.704


The recipe

I’m really trying to work on my hosting skills these days. I love to have friends over, and I love to cook for them. Unfortunately that often means that we don’t spend a lot of time together once they arrive. I’m pretty rotten about sharing kitchen space, or involving others in the cooking process. Being territorial about ones kitchen seems like a natural, if not admirable trait. I wish I was the sort of person who could invite a bunch of friends over, give everyone a kitchen job, and just let them do it. Unfortunately, I’m a kitchen control freak, if I do invite someone to cook with me I can’t help but looking over their shoulders and making little “suggestions” which make me feel like a patronizing ass. I’m not a particularly controlling or dominant person in other aspects of my life, but I don’t think I’ll ever play well with others in the kitchen. So, if I want to see my guests, and I can’t share the cooking with them, I’ve got to get better about doing prep work well ahead.

When I made this cake The Boys were over for the day. It’s quite rare that we all get together in one place at one time, so I should have made the most of it. They’ve been very supportive of The Project, and I like to share, or occasionally inflict, recipes from The Book with / on them. I decided to make this cake, and yesterday’s ice cream while they were over. The recipes list the combined active time at 1 hour 10 minutes, but I probably spent two hours at it between prepping and cleaning. Two hours isolated in the kitchen is a fair chunk of the time The Boys were over. Both the cake and the ice cream were good, and I really enjoyed sharing them with my friends, but I should have thought it through and prepared those dishes the night before. I am getting better about kitchen time management, but it’s definitely a work in progress.

The cake is easy to make, you sift together flour, baking soda, and salt in one bowl, then wisk together vegetable oil, eggs, white and brown sugars, cinnamon, nutmeg, dark rum, and vanilla in another. You fold the dry stuff into the wet stuff and gently incorporate diced apples, and raisins. The batter goes into a Bundt pan and bakes.

This was a very soft, moist cake. It was gently spiced, and packed with apples and raisins. When I served it to the boys the afternoon it was baked I wasn’t too impressed. There was nothing wrong with it, but it wasn’t as good as I was hoping. The recipe suggests that it improves with age though, and I’d have to agree. It was much much better by the third day. There was no great change, all the flavours were the same, but it really came together and the texture firmed up a bit. If I baked it again I would choose a firmer apple. The recipe calls for Cortland or Empire, and the blurb ahead suggests that Golden Delicious or Gala will do, but my cortlands melted into the cake, and those other options are evens softer. I would use Granny Smiths both for the bitterness, and the very firm texture. The cake was a little on the sweet side anyway, so a more assertive apple wouldn’t hurt anything.

This cake worked best as an opportunistic snack. Since it keeps at room temperature for five days (read a week), it was nice to have it there ready to go. The first night I served it I was thinking of it as a big Bundt spice cake for after dinner. It didn’t really fit that application, it’s much more of an afternoon coffee cake (the rest of the coffee cakes are in the Breakfast and Brunch section, and I don’t understand why it wasn’t grouped with them). I’m not going to rush to make it again, but if it was sitting on the counter I’d certainly cut myself a slice.

The recipe

My cookie baking bonanza got a little bit confused. I made ginger cookies that didn’t taste much like ginger, and these spice cookies, which are gingerbread in disguise. I kept mixing them up when I told people which cookies where which, it seemed pretty obvious that the crispy cookies which tasted like ginger should have been the ginger crisps, but no. Whatever they’re called, these were among the best gingerbread cookies I’ve ever had.

I’m reading “A History of Food” by Maguelonne Toussaint-Samat right now, so my head is filled with culinary fast facts. Apparently ginger is a recent addition to what we now call gingerbread. In French gingerbread is still called pain d’épice, spice bread, and for most of it’s history was made with whatever spices happened to be available, rarely ginger.

The cookies are a little odd in that they’re made with vegetable shortening instead of butter. I expected that to be a big turn-off, but it really worked. The cookies are made by sifting together the dry ingredients, flour, baking soda, cinnamon, ginger, cloves, and salt, then beating together the shortening and brown sugar, adding an egg and molasses, then gently mixing in the mixture of dry ingredients. The dough then goes into the fridge to chill for an hour, and is rolled into tablespoon balls. The balls are dipped in sugar, and baked sugar side up.

I was really happy with the way these cookies came out, they had a lovely colour, and sparkling sugar topping was very attractive. I liked the way the sugar caused the tops to crack and craze. The shortening really contributed to the texture of the cookies, they were crisp outside, soft inside, and appealingly rich. An acquaintance tried these at a party and said “they’re greasy, I like that”, I can’t think of a better way to put it. Usually greasiness isn’t something I look for in a cookie, but here it really worked. The spice mixture was right on, not overpowering by any means, but delicate and balanced.

These cookies are an absolute keeper. Just looking at the recipe I probably wouldn’t have made these if I wasn’t doing this project, but I’m certainly glad I did.

172. Brown Sugar-Ginger Crisps p.665


The recipe

I made these cookies in the middle of a cookie-baking frenzy, I was buying ingredients for about five different types, with a couple of backup shopping lists in case I couldn’t find all the stuff for the first tier cookies. Somehow the crystallized ginger that this recipe called for never made it into the basket. I discovered this once I was home and ready to start baking, and just not at all interested in going out to hunt down crystallized ginger. I’m an industrious guy, I figured I could crystallize my very own ginger. I looked up a few recipes on the web (The Book doesn’t have one) and it didn’t seem too difficult, although the recipes were very inconsistent. Some called for boiling chopped ginger in a sugar syrup for about 20 minutes, some asked you to boil the ginger in syrup for an hour, let it steep in the sryrup for a day, boil it for another hour, and to repeat this process every day for a week. Since I was interested in using this ginger for cookies that very afternoon I went for a middle ground and chopped the ginger very finely, and boiled it in a concentrated syrup for 2 hours. It was no where near as good as the store bought kind, quite ugly, and very hard, but it basically tasted like candied ginger. No one else was much interested in my crystallized gingers, but they were my little treat, I loved them with a cup of coffee in the afternoon.

The ginger did a serviceable job in these cookies. They’re a fairly standard cookie base of butter, brown sugar, egg yolk, and vanilla creamed together, crystalized and ground ginger mixed in, and a mixture of flour, baking powder, and salt gently stirred in. They came out as very thin and crisp cookies, studded with the ginger chunks. “Real” crystallized ginger is soft and pliable, whereas my improvised version was quite tough. On the first day they were baked they had a nice crispy exterior with a chewier interior. The recipe says they keep at room temperature for a week, but I found that they lost their crispness overnight. I really would have preferred the chewiness of the professionally produced product in the cookies. Other than that they were nice, they didn’t blow me away, and I probably wouldn’t have asked for a recipe if they’d been served to me, but they were perfectly good.

A strange thing about these ginger cookies is that they weren’t particularly gingery. Beyond the crystallized ginger there’s only 1/4 teaspoon of ground ginger in the recipe. If I made them again I’d up that to 1 teaspoon, many of the Epicurious posters suggest that it improves the cookies dramatically. As written this recipe makes a nice buttery cookie, with a hint of ginger flavour and chewy bites of crystallized ginger. It’s possible that I missed out on what this recipe had to offer with my sub-standard ginger, as they were I liked them well enough, but wouldn’t go out of my way to make them again.

169. Sweet and Spicy Bacon p.656


The recipe

The food blog world has been swamped with recipes for caramelized bacon with a kick, so I decided that now would be a good time to see what all the fuss was about. After trying this recipe I’ve decided it’s just a gimmick, and not a worthy treatment of bacon. I get the concept, and can see the appeal, a dish that’s simultaneously sweet, smoky, salty, and spicy could be the holy grail of addictive breakfast treats. Alas, that’s not how this dish turned out.

The method is simple, but just because it’s easy to do a thing, doesn’t mean you should. You cook thick-cut bacon on a broiling rack in a 350 oven for 20 minutes, flip it over, and spread on a mixture of brown sugar, cayenne, and black pepper, then continue baking for another 15-20 minutes.

In re-reading this recipe I realize I missed the whole thick-cut bacon instruction, and used the normal stuff. That meant that my cooking time was significantly shorter, and I had proportionally more of the sugar-spice mixture than the recipe intended. Consequently my bacon was sweeter and spicier than it should have been. I think I’ve decided that any amount of sugar and spice on my bacon is too much. The flavour wasn’t bad precisely, it still tasted like bacon, but my palate had to filter out distracting brown sugar and cayenne flavours to get to it. Most of my guests thought it was sort of OK, but one just hated it, I think he found this dish personally offensive.

If there’s one thing the internet doesn’t need it’s another ode to bacon, but it’s pretty well understood that bacon is near perfect all on its own. You can use it to make other dishes better, but trying to improve the bacon itself is a fool’s errand.

160. Cranberry Walnut Tart p.786


The recipe

Cooking is a learning process, and a lot of lessons just need to be learned the hard way. There are a host of excellent kitchen habits that food educators are desperate for us to get into, such as, reading the recipe all the way through, verifying that you have all the ingredients, doing things that can be done ahead ahead, getting your mise en place, and cleaning as you go. These are wonderful, labour saving, better for you in the long run, habits. Unfortunately it takes a fiasco for me to really internalize any of those teachings.

Today’s lesson was “Don’t assume, you’ll make an ass out of u and me”. I’d already learned the read the recipe all the way through lesson, so it was time to screw up the checking that you have all the ingredients you think you have step. I made a special trip to the grocery store to get the stuff for this tart, and picking up corn syrup wouldn’t have been a problem, but I took it on faith that somewhere in the depths of the pantry a sticky bottle of light corn syrup was waiting for me. I was wrong, in a two cook household you can never trust that the pantry fairies haven’t come along and wiped you out of cream of tartar. For the record, acceptable substitutions for 1 cup of light corn syrup are 1 cup of dark corn syrup, 1 cup of treacle, 1 cup of liquid glucose, 1 cup of honey, or 1 cup of granulated white sugar (increase the liquid in the recipe by 1/4 cup). You’ll notice that 1 cup of maple syrup is not on that list. I knew that I should really make a simple syrup as a stand in, and two seconds of googling would have turned me on to honey, but I went with maple syrup because I’d failed to heed the “do what can be done ahead ahead” lesson, and the guests were coming much sooner than I was ready for.

For this tart I baked off a batch of Sweet Pastry Dough, then whisked together eggs, brown sugar, maple syrup instead of corn syrup, butter, salt, and vanilla, then stirred in chopped walnuts and cranberries which i forgot to chop (I was frazzled). I baked it for half of the recommended 45 minutes because it was starting to burn.

Part of the filling boiled over the sides of the pan and onto the bottom of the oven, and some got between the crust and the tart pan. That left a lot less filling in the actual pie shell, so it began to dry out. Maybe if I’d chopped the cranberries as as I was supposed to they would have released more juice, and kept the caramel saucy. The pie was really sticky and thick, hard to cut, hard to eat, and didn’t taste all that great. The cranberry-walnut-caramel combination should have been a winner, and it might well have been if I’d followed the recipe properly. The people on Epicurious seem to like it well enough.

As a pie this really wasn’t great, but it worked out well as a life lesson. Today I learned that just because I’ve had an ingredient at some point doesn’t mean I still have it. I’ve also started to think about organizing the pantry so that it makes some kind of sense. In future, if the cook’s note at the bottom says that the recipe can me made a day in advance, I’ll consider availing myself of that. Sometimes it takes several painful repetitions for a lesson to sink in, but I’m begining to appreciate the fact that the Gods of pastry aren’t shy about smiting those who play fast and loose with the recipe. I always feel bad when I give a recipe a poor rating when it was at least partially my fault, but too bad, The Book doesn’t actually have feelings that I can hurt. I give my performance as a cook here 1/5 mushrooms, but the tart fares a bit better.

146. Sweet Potato Parsnip Purée p.584


The recipe

This dish seemed like a winner, but ended up a real disappointment. I’m a fan of sweet potatoes, and I adore parsnips, so what could possibly go wrong? It’s about a simple as a recipe can get, you just simmer chunks of sweet potato and parsnip ’till they’re tender, and run them through the food processor with butter, milk, brown sugar, salt, and pepper.

Looking at the recipe I thought the brown sugar would bring out the essence of the sweet potato and highlight some of its deeper flavours. I didn’t worry about extra sugar because the sharp turnipy bite of the parsnip would be there to pull the dish back from the saccharine edge. I couldn’t have been more wrong. The already sweet enough thank-you-very-much potatoes ended up cloying. The parsnips added a hint of a counterpoint, but not nearly enough, they did lend prominent overtones of bark and wood chips though. The recipe called for light brown sugar, which didn’t have enough molasses to do much for the flavour.

Probably the worst part of the recipe was the texture. The time in the food processor reduced this to a gummy coating paste. Every bite left me with the feeling of peanut butter glued to the roof of my mouth. I made the mistake of leaving some of the dishes for the morning, and the gunk in the food processor set up into a form of organic concrete. Add the weird, almost yellow, kinda orange, but definitely neon colour palate of this dish, and I was ready to be done with it.

I had half my portion on the night we made it, and tried to get through a bit more over the next couple days. Eventually I gave up and let it moulder in the fridge ’till I could throw it out in good conscience. Oddly, the Epicurious reviews for this recipe are fairly positive, so maybe I’m missing something. Mashed sweet potatoes are wonderful things, but from now on I’ll roast my parsnips and serve them along side.

127. Barbecued Chile-Marinated Spareribs p.490

These ribs are dead simple, but they take some forethought. The ribs are simmered in water for an hour, then marinated in sauce of New Mexico chiles, ketchup, garlic, cider vinegar, brown sugar, salt, tequila, vegetable oil, ground cumin, and ground allspice for the next eight hours. Half of the sauce is used for the marinade, a quarter to baste during cooking, and the remaining quarter as a dipping sauce at the table. A little more than an hour before dinner the ribs come out of the fridge and warm to room temperature, then they’re transfered to a grill over low flame for 35 minutes. They’re basted with more of the sauce for the last 15 minutes of grilling time, then they’re rested for a few minutes, and served with the remaining sauce.

The barbecue sauce was simple and delicious. It filled its three roles admirably, it was salty enough to penetrate deeply as a marinate, sweet enough to turn to glowing caramel on the grill, and the uncooked dipping sauce’s raw edge complimented and contrasted the cooked sauce on the ribs. I was very happy to find a barbecue sauce that has a good deal of complexity, and shows some restraint with the sugar. I often find that restaurant ribs are sticky pork candy without much going on beyond slightly spiced ketchup. The bit of the tequila in the dipping sauce was a nice touch, of course bourbon wouldn’t be out of place either.

I’d make the sauce again without hesitation, and slather it on pretty much anything destined for the grill. Unfortunately I don’t think the hour-long simmer did the ribs any favours. They were wonderfully falling apart tender, but I think they gave up a lot of their flavour to the water that went down the drain. I wonder if steaming the ribs, then reducing the steaming liquid and adding it to the sauce would have brought more of the porky goodness to the plate? I preferred the texture and flavour of the meat from the Chinese-Hawaiian “Barbecued” Ribs where they were slowly roasted in the oven. I can’t really see why that technique wouldn’t work with this sauce, and it’s probably worth a test.

Both of those recipes use the word barbecue without actually grilling anything low and slow. I don’t really understand why The Book avoids a long grill over offset heat? Even with my gas grill with few soaked hardwood chips for smoke, I’d bet that basting the ribs with this sauce for a few hours would result in some pretty good barbecue.

I was actually happy with the way these came out, but they could have been even better. The cooking technique literally threw the baby out with the bathwater. They still tasted very nice, but it was primarily the delicious sauce that came through. The pork was there, but not nearly as prominent as it deserved to be.

83. Oatmeal Cookies p.664

The recipe

People are funny about baking. Not everyone, but probably a majority of people who “don’t bake” would at least be willing to try their hand at making oatmeal cookies. When their 5 year olds help bake, they make cookies. These are the same people who will look at you funny if you tell them you’re making biscotti, they think shortbread is too complicated, and are convinced that brownies and cakes only come from a box mix. It must be an issue of familiarity and comfort, but in reality making good cookies is often harder than any of those other baking projects. The skills are the same, sifting, creaming, beating, cracking eggs, the order is just a bit different. Cookies are notorious for burning, and cooking unevenly. Pans have got to be rotated, and racks switched. This is not to say that baking cookies is hard, just that there are many many baking projects which people won’t try because they lack the confidence. Since everyone can bake a cookie, it’s a chink in their armour, and a lead in to more unfamiliar projects. It’s possible that all of these straw men I’ve set up know perfectly well that they could bake other things if they wanted to, but feel it’s just too much effort. Fresh warm cookies are pretty much universally agreed to be worth working for.

These particular oatmeal cookies are fairly standard issue, a bit rough around the edges, but in a very satisfying way. These are about as casual as cookies get, standard butter cookies spiced up with rolled oats, cinnamon, vanilla, and brown sugar. Chocolate chips are given as an optional addition, so I stirred in half a cup. Sift the dry stuff together, cream the wet stuff together, then mix the two doing your best not to create gluten. Bake at 375 for 12 minutes, and contemplate just accepting the second degree burns to your mouth while you wait for them to cool.

If you’ve had an oatmeal cookie before you know what to expect with these. When I’m in the mood for an oatmeal cookie, familiarity is what I’m after though. They’re miles better than the cracker crisp packaged ones, and the oily and inexplicably huge cafeteria cookies. The cinnamon and vanilla come through nicely, and the use of both white and brown sugar adds a bit of molasses depth. The rolled oats let you pretend they’re healthy, but the added chocolate chips give away the lie. This is my standard go-to oatmeal cookie recipe, I probably make them four times a year, and I love them every singe time. Just make sure to have a glass of milk on hand.
