115. Grilled Calamari with Arugula p.344


The recipe

This dish was fun to prepare, fun to serve, and fun to eat. I served it at a friend’s place for a pot-luck. Bringing a bunch of squid over to someone’s house might seem a bit weird, but it worked out really well.

I broke the squid down and scored the tubes at home. Incidentally many of the “cleaned” squid I bought still had pens and beaks attacked, or lost up inside them. I always though the backbone was called a cuttle in both squid and cuttlefish, but apparently I’m wrong. I’ll call it a pen from now on. Anyway, I arrived at the party with a Tupperware container of squid bodies, one full of tentacles and fins, and a little jar of a simple vinaigrette of lemon juice, olive oil, garlic, salt and pepper. Then I stowed everything in the fridge till it was time to cook.

Ten minutes before we were ready to eat I covered the squid in some of the vinaigrette and left it on the counter to marinade. The grill was nice and hot from cooking up some other meats and veg being served that night. While everything else was resting, I literally threw the squid sections onto the grill. I tried delicate placement for the first few, but lobbing them seemed to work better so I went with it.

I love watching squid cook. After just a few seconds on the heat it changes shape and colour radically. It goes white, tries to curl, and shrinks by more than half its size. I made sure to put the scored inner sections of the tubes down first. The squid wants to curl in that directions, so I let gravity help me stop it. After about 45 seconds I gave them a flip, and fought a good deal of sticking. Once it was done I took it back inside, tossed it with more vinaigrette, and put it on top of a very simple arugula salad, dressed with more of the vinaigrette. I added a few twists of black pepper, and an extra squeeze of lemon juice, then we were ready to eat.

The salad was quite good, the arugula really helped this dish make sense. The calamari were tasty on their own, they had a nice texture, not too chewy, but definitely squiddy. They had a mild flavour, mostly just that general “of the ocean” scent, with most of the flavour coming from the vinaigrette. The arugula really made the dish by contrasting and counterpointing the squid. The peppery, crisp, cool, and crunchy versus, the chewy, warm, and coastal was a great combination. I wasn’t nuts about the dressing, it could have used more lemon and more salt. I rarely accuse The Book of under-salting, but I felt more salt would have helped bring out the very subtle flavours of the squid.

This recipe was another example of The Books collusion with the wooden skewer industry. I’m not sure if they’re all Freemasons, or part of the Illuminati, but The Book is in love with skewering things to be grilled. It recommends skewering the tubes on both sides to help prevent curling, and making flipping easier. I tried it, it was an enormous pain to get them organized on the skewers, so I just gave up after the first couple. Placing the squid segments down on the grill worked just fine, and I have better uses for my time than threading squid bodies onto sticks.

If I were to do this one again I think I’d add the marinade to the squid segments a couple of hours in advance. It seems to me that adding the lemon juice early would denature some of the proteins, and turn it into a simple ceviche. The squid would shrink up and be easier to fit on the grill, and more of the flavour would penetrate. I’m not sure if that would cause the squid to get tough, but it’s certainly worth the experiment to find out.

I was quite happy with the way this turned out. A bunch of the people at our party had never tried squid without it being breaded and fried, and some were a bit squeamish about it, but most were willing to give it a go. I had a great time watching first time squidders experience that unique squid texture. I think it went down pretty well with the party crowd, and I was happy with the way it turned out. It was simple enough to prepare, and didn’t send me across town looking for wacky ingredients. Squid is conveniently dirt cheap, and great for serving to a big group, and it made a good conversation piece. The quick marinade didn’t really get into the squid enough, and the dressing was a bit boring, but otherwise it was quite a lovely dish.

114. Foolproof Grilled Chicken p.363


The recipe

The blurb before the recipe says that the secret to perfect grilled chicken is to brine it then toss it in a vinaigrette once it’s done. I’ve never really had a problem with my non-brined, non-dressed grilled chicken, but this version does have its charms. Brining makes things taste good by saturating them with salt, sugar, and extra liquid. They remain moist and get the flavour enhancing goodness of salt all the way through the meat. Unfortunately that means brined dishes are really salty. If it’s done right it doesn’t taste all that salty at the time, but I inevitably wake up parched in the night after a dish like this.

We made this dish for some friends we were visiting. They live near San Francisco, which means I got to have my first Whole Foods and Trader Joe’s experiences. Other than amazingly priced wine I didn’t really get what the big deal about TJs was, Whole Foods really was worth they hype though. On the one hand it’s just like every other megalomart, only expensive. On the other good quality organic stuff was everywhere. We just don’t have an equivalent in Montreal, and one opening here would be a big deal for me. We’re taking a mini-break and visiting different friends in Brooklyn this weekend, I’m anxious to get back to a Whole Foods and do a little exploring. Incidentally that means I’ll be away tomorrow through Sunday, so no updates ’till Monday.

I picked up the chicken and herbs for this dish at Whole Foods, and most of the rest of the ingredients for dinner from a cute farmer’s market in Palo Alto. I brined the chicken for three hours instead of the recommended six. I also misread the recipe and added a bunch of lime juice to the brining liquid, it didn’t seem to affect anything, so no harm done. I then made a Thai style vinaigrette of lime juice, garlic, cilantro, mint, red pepper flakes, salt, and oil. I left out the two tablespoons of fish sauce, which the recipe promises won’t make the dish taste in the least fishy. My dining companion’s superpower is detecting fermented fish at even the lowest concentrations, so I decided not to include it.

The Book offers extravagantly detailed instructions on how to grill the chicken. It comes down to searing it for a few minutes, then moving it to indirect heat and letting it cook slowly until it’s done. The breasts will take longer than the leg pieces. Once the chicken is done you remove it and toss it in the vinaigrette. You then put halved limes cut side down over the hottest part of the grill for a few minutes to develop some grill lines. I’m not sure that the grilling of the limes served any purpose, but they did look cool. You can imagine that heating them makes them easier to juice, but I’m pretty sure it’s just a gimmick.

This method did produce a very fine grilled chicken, I’m not sure it was worth the extra effort though. The vinaigrette worked wonderfully, and I’d be happy to try it again as well as the alternate Mediterranean vinaigrette it gives as an option. The brining enhanced the flavour of the chicken, but it really was quite salty. I have a hard time deciding how much the brine actually improved the chicken, because I rarely buy organic, which is naturally more flavourful. I was a very poor scientist to vary both my ingredients and methods at the same time, I’ll need to do some control experiments to figure this out.

I’ve never found grilling chicken to be all that error prone or difficult, so I think I’ll skip the brining step in future. The vinaigrette added nice acidity, and aromatics to the chicken. It was simple to prepare and fragrant, a definite keeper. I liked serving grilled limes with the chicken, they were fun, looked cool, and I liked being given the option of adding as much or as little acidity as I’d like. This was a fairly good grilled chicken recipe, but I don’t think I’ll give up my home-brewed technique.

10. Asparagus With Tarragon Sherry Vinaigrette p.520

This turned out quite well. I served it with steak Diane and brown-buttered corn with basil. Here the asparagus is steamed and then shocked in ice water before tossing with the vinaigrette. I usually boil my asparagus, but steaming worked very well. The recipe calls for a hard boiled egg to be passed through a sieve and sprinkled on top. I skipped this step, as my dinner was heavy enough with the steak. If I were serving this with salmon the egg might have worked very well.

The Tarragon was a great addition to this dish. The vinaigrette was simple and added a pleasant tang, while the tarragon has a great affinity for both the asparagus and the mustard in the vinaigrette. I chose to do this recipe early on in the project because I love tarragon, but don’t encounter it all that often. I actually hear about it more as a classic ingredient in French cuisine than I come across it on the plate. I live in Montreal, where every second restaurant is a French bistro, and you might expect it to turn up. That’s not to say that it’s not around, just that it’s under appreciated.

1. Baby Greens With Warm Goat Cheese p.131

Ahh, you always remember your first. This was a great little salad, mesclun in a simple vinaigrette topped with goat cheese croquettes. It hardly took any time to put together, and the warm gooey goat cheese is pretty hard to beat. Make sure the cheese is well coated with the bread crumb mixture, or the cheese will end up in the pan instead of in your mouth.
